PEDA PLANT

A sweet delicacy, peda is prepared from khoa and sugar. Spherical in shape, it weighs 15-20 grams. Peda varies in colour from white to yellow and has a coarse, grainy texture. It is among the most popular milk-based sweets in India. A preferred sweet on religious and festive occasions, peda is distributed as a present called prasad, cherished by devotees and recipients.

DAHI/CHHACH/LASSI PLANT

A semi-solid product, dahi or curd is obtained from pasteurized or boiled milk by souring (natural or otherwise), using harmless lactic acid or other bacterial cultures. In eastern India, a sweet variety of dahi known as mishti doi, lal doi (red dahi) or payodhi is popular. Chhach, chhas or mattha (synonyms for buttermilk) is a by-product obtained in the preparation of makkhan from dahi. Lassi is a popular dairy drink served sweet or savoury, made by churning dahi, mixed with a small quantity of water. It is white to yellowish in colour and has a pleasant, acidic taste. It is consumed as a refreshing therapeutic summer beverage to guard against sun-stroke. Usually consumed chilled, it is marketed in sachets or in long-life Tetra Paks.

PANEER PLANT

A national delicacy, paneer is obtained from cow or buffalo milk or a combination thereof by precipitation with sour milk, lactic acid or citric acid. Typically, paneer is marble white in appearance, having a slightly spongy body, close-knit texture and possessing a sweetish-acidic-nutty flavour. In India, in the last few decades, the popularity of paneer has spread from the northern parts to all over the country. Its growing popularity has led to its integration into the Indian cuisine.

KHEER PLANT

India’s favourite dessert par excellence, kheer is a sweet milk-rice confection. It has the status of a royal treat. Kheer is a heat-desiccated, cereal-based sweetened and concentrated milk confection. Kheer prepared from buffalo milk is whiter and thick bodied and is, therefore, preferred over that obtained from cow milk.

SHRIKHAND PlANT

Shrikhand is a semi-solid, sweetish-sour fermented milk product, prepared from dahi (curd). It has a sweet tangy taste. Shrikhand is a popular dessert and forms part of a meal on festive occasions, particularly in the states of Gujarat and Maharashtra. Like dahi, it is very refreshing, particularly during summer months.
