Chhach, chhas or mattha (synonyms for buttermilk) is a by-product obtained in the preparation of makkhan from dahi. Lassi is a popular dairy drink served sweet or savoury, made by churning dahi, mixed with a small quantity of water. It is white to yellowish in colour and has a pleasant, acidic taste. In India, in the last few decades, the popularity of paneer has spread from the northern parts to all over the country. Its growing popularity has led to its integration into the Indian cuisine.
